    Awesome recipe. Definitely a match with the Double Jack Stew. I did this recipe last year and it was a hit and will be doing it again this St. Patrick's Day.

    We saw these made last week and decided they were going to be our St. Patty's dish. i made this recipe exactly as written and they turned out perfect. They stayed together nicely - used two spatulas to remove them from the pan and kept them in a hot oven on a rack while the rest of them were being made. Will be making these again!

    I absolutely love these things! Easy to make, wonderful texture and flavor. NOM NOM! The Double Jack Stew MUST be served on these.. it makes the entire dish just perfect. Would not change one thing about this recipe.

    I thought this recipe was very good! The only change I made was using wheat flower. If anything, my batter turned out a little thicker but worked great! Broccoli or turnips would work just as well as the cauliflower and give it even more flavor.

    I was excited about the cauliflower as mashed potato. I had less of everything I needed, (basically clean out the frig & pantry, kind of thing so I modified the ingredient list. I used a chicken bullion cube, kosher salt and water to boil 3 med potatoes and 2/3 cauliflower head. (All cut into chunks. The mixture was still very wet after draining and mashing, so I did not used the milk, egg or sour cream. I used: cream cheese, handful (1/4 cup of grated cheddar, 1/8 to1/4 tsp. of dry thyme, dry parley, fresh ground pepper and minced garlic. Add 2-4Tbsp of flour until mixture is tightened up. Stop here you get a creamy mashed side. (dress with a little cheddar and parley. Add more flour for thicker mixture to make fried pancake using the oil. Fry on med-hi oiled grill til brown, flip and brown 2nd side. Use a thin spatula and drizzle oil as needed when frying. Thanks, Guy.

    I also had a difficult time keeping the batter together in one piece. I found that if I let the first side cook a little longer and firm it up, then they held together a bit better. The taste was pretty good, but make sure you allow yourself at least an hour to cook them. I was disappointed to be in the kitchen over an hour later trying to use up the batter.

    Was really looking forward to this but could not make this pancakes....very disappointed....so I made hash browns...someone tell me the secret tried 3 pans and 3 spatulas...no clue...how to make pancakes our of this....
