Wow! Now these are unbelievably delicious brussels sprouts. I have converted many non sprout lovers over the years with a cream and mustard sauce... But really, that just pales in comparison to this gem. Guys layering of flavors, combination of sweet and salty, elevates these humble cabbages to a "feature flavor" level. We are vegetarian so had to use "fake bacon" (I know. It even makes me want to giggle!so hence no additional flavorful fat to toss the sprouts in. To solve this I added more olive oil and sauted the "bacon" pieces for a few minutes to lend flavor to the oil. It worked brilliantly. After non stop yums and profoundly grateful guests, I am now a confirmed fan of Guy's culinary talents! Thank you.

This was delicious and very easy. I loved the mix of salty and sweet flavors. I made this for Christmas dinner and substituted dried cranberries in place of the raisins and currants. The crowd loved it!

I was never a fan of brussel sprouts... until now. This was delicious! Perfect balance of sweet from the currants and raisins and salty from the pancetta & capers. Instead of pine nuts because I didn't have them on hand, I used walnuts. This is a keeper. Yum!

Guy I am with you~Never ate Brussel Sprouts till adult. We prepare similar way. I like raisins in mine as well.Plus, how can you be wrong w/a smidge of Pancetta/Bacon? We slice them very finely prior. Thanks, Guy!

This recipe is fabulous!Three members of my family who "do not like brussels sprouts" went back for seconds when I made this at Thanksgiving. I couldn't find the Pancetta so I substituted bacon . I'm making it again for Christmas. I too did not use the pine nuts because of allergies. It is still fabulous.
