    Didn't have Pancetta - used bacon. Didn't have capers. Dind't have pine nuts - used walnuts. Ddin't have currants - only used raisins. but okay, I made it with lots of love and they were a huge hit. I've never cared for brussel sprouts, but I thought they were absolutely delicious. Got rave reviews at the Christmas dinnertable.

    I made this for Christmas and then again a week later because we were craving more! I disagree with Carol, this recipe can be made when you live in a small town with limited grocery options. I decided not to use Pancetta because of the high amount of fat and used a little leaner cut of ham. It was flavorful and still had a slight chewy texture. I could not find currants at the local grocery store (and was out of time to search at other stores, so I left them out. It was still to die for and everyone, including my non-brussel sprout eating daughter asked for seconds. She also asked for a copy of the recipe to take home.

    I think I could just eat the sprouts right after roasting without anything else added! I think all the other stuff took away from the sprouts themselves, and I don't even like sprouts! These were good!

    This was SOOOO easy and SOOO good! It's going to be a holiday favorite! and we'll enjoy it many times throughout the year! The only "issue" we had was that we had to add a little olive oil when browning. It was accommodating to make ahead before putting in the oven. When dinner time was close we baked it and then added the rest of the ingredients that had been prepped before company came. Easy. Delicious. Thanks Guy! OH! and it was even more delicious the next day when the flavors had time to sit. wow......

    I have always hated brussel sprouts - but they are my brother's favorite. So I made these for Christmas - they were awesome!!! All 8 people at dinner loved these and they went fast.

    I loved them and am making them again tomorrow because my husband and I did not get enough.

    I came home from work on a Friday night and found my husband watching this episode. He told me we had to make it so the next day we went and got everything we needed and was it worth it...... We made it again 1 1/2 weeks later for Christmas. I have to make extra so they will not fight over the leftovers! Great Job Guy!!!

    This recipe was super easy and super good. The mixture of the salty ham (I use Spanish hamon Serrano and sweat raisins was great. First time i could say Everyone loved the brussels sprouts.

    After seeing this recipe on Guy's show I had to try it out, especially after he challenged non Brussels sprout lovers.
    I made this for Christmas dinner and it was a huge hit, even the kids loved them. I couldn't believe it, the kids were actually asking if they could have seconds.
    I had to substitute bacon instead of panceta, and I also couldn't get the currants or the nuts in time for the dinner and it still came out fantastic.

    Absolutely everyone at the table loved the dish and said that they would make this again in a second. My mom was the only one at the table who liked Brussels sprouts before and she grabbed this recipe from me for next time.

    I may have added to little vinegar so I would add a bit more vinegar next time for my own taste, but it was great and a new favorite in my house for sure. I cant believe it, I actually like Brussels sprouts now!

    I registered at Food Network for the sole purpose of raving about this recipe. On a scale of 1 to 5, it is a 10. My husband made it. We are looking for ways to eat more vege's with flavor, not fat. THIS IS IT!!!

    Normally we don't like to make a special trip to the store for ingredients but this is WORTH IT! You should not leave anything out or substitute, if possible.
    I feel sad for the crabby person below who couldn't find pancetta. Any upscale or international food market will have several choices of pancetta, as well as currents. If you live in a small town and only have super WalMart, then you just can't make this recipe. It's a shame but you're out of luck. The pancella is chewy and lovely. It is not supposed to be fatty or crisp. You can substitue bacon only in dire emergency but fry it crisp. Still, the recipe will lose alot not having the chewy pancella.

    The melding of flavors that goes on between the brussels sprouts, pancetta, pine nuts, currants and raisins is just exquisite. Make this for your best dinner party. Thank you, Guy!
