I followed the directions to the letter and it turned out half raw, half burnt. The chorizo was over-powering and the shrimp were not included in the ingredients list. Terrible recipe!

Delicious I thought! I halved the entire recipe because I was only cooking for two. One complaint I do have is that the shrimp were not in the ingredient list but in the directions so went I went shopping totally forgot to grab the shrimp. I thought it turned out great though. Not too little or too much liquid and I salt and peppered to my taste. All around great paella I thought!

Took much longer to cook than the estimated time and required more liquid. It also tasted horrible. This is the third recipe (out of three that I have tried of his, and there were problems with all of them. Never again, no matter how tasty it looks!

Was this supposed to have shrimp too? I also think this recipe had too much rice. And it took much longer to cook the rice and required more liquid than what was provided for in the recipe. It tasted delicious though.

I recommend adding half of the salt and pepper called for by Guy and seasoning to taste torwards the end of cooking. I found the salt and pepper in this recipe to be overwhelming.

I love Guy, but wow are his recipes time consuming. This was indeed delicious. It's obvious he just knows and appreciates great food, but this took the better part of my Saturday afternoon. Love the results, but I'm really hoping the family doesn't want it again soon.

To everyone complaining that this isn't "traditional paella"...what does that even mean? We live in a globalized world. We can eat food from any culture in any major city. I could walk downtown and get Chinese, Italian, Spanish, Mexican, Ethiopian, Vietnames, Thai, and a hundred other cuisines if I wanted. There are very few places where I'll get the same meal prepared in exactly the same way. This is what chefs do--they add their own spin to things. Even regular old cooks at home do it. I'm not fond of some ingredients, so I leave them out. Grilling is too complicated (and I live in an apartment so I bake, broil, or saute everything. I prefer cut of bits of chicken to full thighs, so in this recipe I did just that (which helpfully solved the problem some posters had of it not cooking fully. Sp stop complaining! If you like your version better, then make your version. If you're not interested in re-imaginings of recipes, then don't bother looking then up and just stick to your old favorites. There's nothing wrong with that, but there's also nothing wrong with someone putting a different spin on it. It is not "sacrilege;" it's paella. Guy just made a recipe, he didn't write "Bible 2: Electric Boogaloo." CALM DOWN!

This was wonderful. Now I am hoping to find your oyster recipe where you baked the oysters to make them easier to shuck and then topped them with stuffing. Am I dreaming?
