I had tried to make egg rolls before but when I made these they were so good. Even though my husband thought he didn't like avacado but these changed his mind. I will and would make this recipe many times over.

It was a delicious dish : The ginger and bell peppers with the freshness of the avocados blended well : I just bought the egg roll wrapper from the asian store instead of making them, it came out so crispy too : Thanks Guy for the new twist in egg rolls :

So Yummy! Or should I say Off the Hook! However I am currently trying to be gluten free so instead of using the egg roll wrappers I rolled the filling in cabbage leaves and they were delicious.

Made today with a couple of variations and oh my God, delicious! You can leave out or add ingredients you like. I like to add seasonings to taste so I used a little more soy sauce and added a bit of sugar. Even my autistic son who pretty much hates everything, loved them!! Cannot wait to make them again! I am loving this website. Our dinners are so varied now! Keep up the good work and please keep adding new recipes! I also love how easy the site is to navigate!

Next time I will use ground chicken and a little bit bigger on the veggie cuts. : could even chunk the avacado and add more to make the rolls extra creamy next time. All in all, good flavor.

I've made this twice now. At least two years apart and now I'm wondering why so long. These are fan-frickin-tasic! Both times I left out the avocado, maybe I'll try it next time. Buy slaw mix to save some time. I made these for a party last night, my filling made about 17 rolls but I also bought wonton wrappers so today I added some shrimp to the mix and made about 8 more. So good! Will definately make these more often. Next time shrimp & avocado.

FABULOUS! Fun, easy, delish of a dish. I used 75% canola oil, 25% peanut oil to fry. All good. I placed a hefty spoonful of chicken mixture on each wrapper, then topped with about 6 salted peanuts and a sprinkling of chow mein noodles (thanks to tbell023 on 6-20-12 for crunch. Don't add til ready to roll so the noodles don't get soggy. My rolling skills are lacking but even the "ugly" ones came out well. In fact, they had more "character" nd dimension. Cut chicken smaller or shred to ease rolling. Fried 4 @ a time. Helpful to make chicken mix ahead & refrigerate. Warm up a little before deep frying to help maintain oil temp. Of course, any combo of meats, veggies could work.

Thanks to boobooduper21 on 5-19-12 I made a killer desert. I mixed mascarpone cheese with blackberries, mango, cinnamon, honey & pinch of salt; rolled & fried just til golden brown. Immediately before serving, spritzed w/ Reddi-Whip chocolate whipped cream. Mmmmmmm!

The eggrolls are very tasty. I made large batches of them and froze them to keep on hand for appetizers. I made chicken, turkey, shrimp and pork all equally good. I agree the avocado didn't add that much flavor or zip to the recipe, so next time I will leave that out. This is a keeper, my family loves them.
