    Such an easy and delicious recipe. I used ground turkey and instead of water I used extra vegetable stock I had on hand. It was so flavorful and aromatic. This is going into regular rotation at my house.

    This was very easy to make and very tasty. I'd give it 4.5 stars if I could. I saved some time by using frozen onions and peppers, and canned tomatoes, it turned out great! I used long-grain Jasmine rice, which gave it a wonderful aromatic flavor, moreso than plain white rice. I also used chicken broth instead of the extra water. Used black beans instead of kidneys. Don't skip or skimp on the beef. You don't really notice it's there, but it gives the rice body and flavor. Don't worry about it being too filling or too much meat if you're planning to make it for a side dish. It's kind of like the beef in cajun rice - necessary, but not the main star. Oh, and I put it in a crockpot to keep it warm for the potluck I took it to. Rave reviews and lots of people asking for the recipe.

    I like to add chunks of chicken instead of ground beef/turkey. I just cut the chicken into small cubes and cook it with the vegetables until adequately browned. I also add a bit of extra spice by adding a whole jalapeno, minced.

    I used a ground turkey (pound and a half and a cup of brown rice instead of the two cups of white. It took longer to cook and more liquid but was really yummy and lower carb. I tried with and without the beans. It is good either way, I just like it better without.

    Made this for dinner (with ground turkey. It was DELICIOUS! I used corn instead of beans (because I didn't have any beans. Not too spicy for the kids but a nice enough kick for me. I'll definitely be making this again. I'll probably toss in some cilantro and cumin for a bit more umph next time. :

    I thought the flavor was some what bland I added garlic salt to the mixture to make it taste better. I added extra spices too and added basil and parsley. I would recommend adding some spice to this dish and lots of it to make it amazing. Chipotle peppers in adobo would be amazing
