    I made this chicken using chicken breast,I sliced them into long strips about one inch thick, grilled it for about 3 minutes on each side and served them as appetizers . they were amazing!!

    I made this without the rice wine vinegar because I did not have any on hand, and it still turned out amazing! As mentioned by others below I was worried that the mango would be too tropical, but it was in perfect combination with the chipotle. Sweet and spicy. Perfect!

    The marinade/sauce was really different but delicious! The mangos blended so well and didn't make the sauce taste overly sweet or fruity, and the chipotles added great flavor and little bit of heat - yum!

    This was so good! I am going to use it on pork, and fish. We ended up marinating this for 2 days and we could really get the flavors.
    I think that I will do this in the oven in winter.
    I was a little afraid of the cilantro- as it is not my favorite, but everything blended so well. Cilantro is one of those spices that I keep thinking if I try this one more time I'll like it, but never happens. I could not even taste it in this recipe. But I think it added to the depth of flavor in the marinade without being over the top for me.

    I was suprised this sauce did not taste overly tropical. The chipotles really made it taste like a bbq sauce and is absolutely wonderful! We are adding this to our regular dinner menu, as it is easy and delicious!

    I am not a big fan of chipotle, but this tasted awesome! The mango and chipotle combine to make a sweet and spicy flavor-fest!
