This salad is money!!! Great for dinner on a hot night, and very easy on the wallet.

This salad is INCREDIBLE. My husband and I went to Greece for our honeymoon, and eating this salad was like being back there. I made it for the first time last night and am making it again tonight.

Delicious and easy to "pre-chop" and toss together right before serving for pot luck or dinner party! HUGE hit!

Boy, this salad needs more "play"...its flavor profile is amazing.
I've made it a few times using fig balsamic vinegar and the red wine vinegar. Once I made it using champagne vinegar instead of red and it just wasn't as good. There's something abt. the pairing of the balsamic and red vinegars that produces an almost sweet flavor.

This delicious salad was my entree and I didn't even miss the meat or fish..yummy! I was out of capers and balsamic; it didn't matter--it tasted fresh, wonderful flavors, and I will make it again...soon!

...until I tried this one. I saw it on TV and happened to have every ingredient on hand so I made it and I actually followed the recipe exactly. That is something I rarely do. A recipe to me is usually just a guide. But, I am glad I followed this one because it turned out perfectly and it was fantastic. Thanks for the recipe. I will definitely be making this again.

I made rosemary croutons with roasted garlic ciabatta bread, they go great with this salad. It's even better the second day!
Also added some sliced mushrooms. Yum!

This was excellent salad. I had all ingredients on hand (pretty much and pulled it together as my husband was grilling chicken. We both enjoyed it very much. Adaptions I made was to use a whole grain bread, white balsamic vinegar and feta cheese because that's what I had. Will definately make again.

This is a great recipe, but there are no traditional salad greens in this one. I like the smoothness the avocado imparts, and the silky texture of the goat cheese. I have also tried this using feta, and it was just as good. Definitely be sure ot add the bread at the very last minute to avoid the soaked-up factor. For me personally, I like a little more char on the bread to give it even more flavor.
