    Amazing!! I personally could have used more cashews but that is minor and next time I might even add some pineapple!

    Side note to everyone having problems with the liquid: In the show, Guy puts in about 3 cups of liquid TOTAL. So he puts in about 2 cups of coconut milk and 1 cup of chicken stalk, NOT 3 cups of stalk. Hope this helps everyone when they go to make the recipe in the future! Mine came out perfectly with this, no extra time, no straining liquid.

    This recipe was great! Went perfectly with the Pineapple Shrimp with Fruit Salsa. NOTE: I think there was an error in the recipe - Guy only used 1 cup of stock along with the coconut milk. I cut down the stock and it came out perfect.

    An important step is missed in this recipe you must bring it to a boil before simmering. I toasted the rice in coconut oil vs. canola which added more flavor and recommend double the cashew. It's tasty and was a good compliment to the jerk chicken with mango salsa. Remember to rinse the rice before you begin; unless you like it sticky.

    There was absolutely no possible way to cook this rice properly in 15 minutes. It looked like SOUP, which isn't surprising since the recipe calls for just under 40oz of liquid (24oz of stock, 15 oz of coconut milk and then only says to simmer on low for 15 minutes. Not a chance. I had to increase the heat to med-low and go for an add'l 30 minutes, which did at least turn it back from soup into rice, but didn't fully cook through the rice. I'm willing to concede that the specific type of jasmine rice I used had something to do with it (brown jasmine rice, said to simmer for 50 minutes!, and the end result had wonderful flavor so I will be trying again.

    This was awesome. Everyone liked it, even if they said no to the toasted coconut on top, I gave it to them anyway, and they all wanted more! I didn't have cashews so I used almonds. Served it with an Asian-style chicken dish.

    This recipe called for way too much liquid, thus the rice was mushy. It did not have much of a coconut flavor which I would have liked more of. It was much better and less bland when I added Major Grey's chutney to it. It needed more sweetness and the chutney was a nice touch. Also, I would halve the recipe next time, it made way too much. I also added more cashews and would add more toasted coconut next time.

    Great dish! Served this with Guy's Citrus Chicken. Not too heavy on the coconut flavor which was nice. Even my boyfriend who's not a big rice eater gave this an A and went back for seconds!
