Fill a cocktail shaker with some ice. Add gin, simple syrup and fresh lemon juice. Shake. Strain into an ice-filled Collins glass and top with a splash of club soda. Garnish with a lemon peel.;
In a sauce pan over high heat, combine all the ingredients. Bring to a boil, and when sugar is fully dissolved remove from the heat. Let cool for 20 minutes, then strain.
