    Every year my husband and I host a chili cookoff football party and this chili won in the best spicy category. After making it a few times, My preference is to substitute chorizo for the italian sausage because I just don't think fennel belongs in chili. Also, since it doesn't specify a specific chili powder, I mix 1 T of Ancho, 1 T of Pasilla and 1 T of Diablo. I also recommend using tri tip instead of the boneless chuck roast as it gives a better bite.

    Pros:
    1 This chili tastes very good! I didn't think it was spicy at all (using 2 of the 3 recommended tablespoons of chili pepper, but my husband said his nose was running after eating a whole bowl.
    2 It makes a lot of chili. My large pot was filled to the brim.
    Cons:
    1 Whoever estimated the 'prep' and 'cook' times for this recipe is on crack. That summary is very deceiving. This recipe will take at least an hour to prep and get everything cooking. There's a bunch of chopping, plus roasting/peeling peppers.
    2 It is an expensive recipe. There are 3 types of meat, 3 types of peppers, 2 kinds of beans, and over a half dozen different spices required.

    The taste alone would get 5-stars, but the expensive price tag and misleading prep time has to knock it down.

    Holy geeze! This is good! Don't let the long list scare you (or the name for that matter. All you have to buy are some easy to find meats, a few peppers and a couple cans of tomatoes, the rest you probably already have. I have tried so many chili recipes and they all taste the same, this is above and beyond a typical chili. I will never make another again, this dragon is a keeper!

    This is our favorite chili! Takes some time but well worth it! Do all your prep first and wear gloves while working with those peppers! YUM!!!

    The scents coming from my kitchen were mezmerizing. I was able to use all ingredients listed. However, i did not roast my peppers. They were nice and crisp when it was all said and done which added a nice crunch. I have tried many recipes online and this is my top recipe ever. I will deifnately make it again.

    It's a winner-literally! My office had a Chili Cook-Off for our Hail & Farewell and I took both prizes; Hottest & Best Overall. I also admit I screwed the recipe all up. I added everything at all the wrong times; I even forgot to char my Anaheim’s so the chili sat cooking while they were under the broiler. I had to make a few mods since I'm living in SKorea and can’t get the full ingredient list. I used both Poblano & Anaheim Chili's, and they didn't have straight Chili or Cayenne powder so I had to use Ancho & Chipotle chili powder instead (1.5 tblspn of each. I was also short of time, so the night before I "cooked" the chili and threw it in the fridge and the next morning I tossed it in the slow cooker for 8 hours on low. I mentioned I won the Hottest Chili category-I threw 4 Habaneros in that bad boy & even I had steam coming out of my ears!!!!! Everyone loved it & I'll even make some for the Hubby when he gets back from Afghanistan soon!

    Great recipe! But I have to agree with brewsterb; the prep time is about an hour, but who cares? Just keep giving me great recipes!

    One of the best chili recipes ever. Simple recipe with big flavor. Be sure to roast and peel peppers, it's a very basic and common technique. This recipe won't benefit you, if you're looking for shortcuts. You can use black beans instead of kidney beans, if you don't like italian sausage (I recommend nduja, you can double the chuck or vegan italian sausages will work too!

    Great dish. But honestly, the ten minute prep time is only realistic if it takes you ten minutes to:

    • cook a package of bacon to get bacon grease: 10-15 mins
    • roast, peel, and chop 3 Anaheims: 30 mins
    • clean and chop 4 peppers: 5 mins
    • clean and chop 2 onions: 5 mins
    • clean and chop 1 head garlic: 5 mins
    • prep sausage and beef: 10 mins

    So... yeah...more like an hour prep time, unless you have a troop of elves at your disposal.

    We get it: you want us to make these dishes. We probably will anyway - there's no need to be unrealistic about prep time.
