This was the absolute best chili I have ever made/had. I made a couple substitutions as I burned the chili's while attempting to roast. So substituted a can of adobo chili's (only a few and a can of tomatoes with habenera chilies. So delicious I had to sign up to write a review for the first time on foodnetwork. This is a keeper. I forgot to add that I cooked this in the crockpot.

I make chili often, but was looking for a new recipe to change it up. This is the best chili recipe! It has layers of heat but not overwhelming. The only change I made was instead of beer and chicken stock, I used V8 juice.

This recipe is amazing. The prep is very time consuming but so worth the results. It was spicy enough to please the adults but not too hot as my kids all asked for more. I can't wait to make it again!

So thats how you get an amazingly meaty tasting chili! Loved it... although next time I will follow the recipe and use regular italian sausage and not hot, that was a little rough!

The best chili ever!!!! I'm a follow the recipe kind of person so, I didn't make any real modifications, just followed Guy's recipe. I've made it several times and it truly is the best chili I've ever had. I made it for a dinner party chili contest and it won hands down. Seriously, it's perfect. Only downside, it does take a lot of time and prep and it is pretty expensive. So, either save it for super special occasions, make some modifications to fit your budget, or just ***** it up and throw down some $$ for the best chili you'll ever eat!

Tried this recipe last night for Sunday night football watching with 10 friends - Delicious and huge crowd pleaser! The chuck is an excellent addition!
Keep in mind the recipe calls for all vegetables already chopped, hence the 10 minutes of prep time. The chopping will take MUCH longer (roughly an hour of prep, but once it's in the pot, it can really just sit with occasional stirring. I did not roast the peppers first due to time and I thought it came out great, although I would definitely try that next time. I just started with the caramelizing of raw peppers and onions.
I love spicy, but I was worried about the whole group. I followed the recipe with 6 peppers, but I de-seeded all of them and the chili was wonderfully flavorful, but by no means too spicy. I would probably throw in another pepper or so if I was making again for my family.
I had a no-pork person in the group so I cooked the sausage separately and had everyone else add it to their bowl.

Great tasting chili. Made a few mods, smoked the chuck for 2 hours before chopping and adding to the pot. Also added a roasted Serrano chile. Substituted bacon for the sausage. We found it to be a little hot, and we like it hot, but added about a teaspoon of brown sugar. The sugar did not make it sweet, but didi temper the pepper burn slightly and added another level,om flavor .
Overall the best chili we have ever had. We are going to enter it in a Chili Cook-off later this month

This ain't texas chili. It ain't New Mexico or even Mexico chili. For those of us that like chili for the flavor and texture, this is simply the best tasting chili you will ever put in your mouth. Well worth the effort. The roasted peppers, plus the addition of sausage (I used HOT, gives a flavor you can't leave alone... Add more heat, because the recipe is not hot enough. The title is misleading. Best tasting chili I have ever made.

Great chili recipe! It is very labor intensive as far as prep - much longer than the stated 10 minutes - but well worth it. Just got done making a large pot for dinner tonight and it came out wonderfully. A good amount of heat for those of you who like spicier chili.

I loved this recipe. I changed it a bit. I used only jalapeno peppers, 6 of them with seeds and I only used 1 tsp of cayenne. Was a major hit! This is on my Superbowl menu now!
