I made this recipe for a chili cook-off and I won! I do not like chili and I have never made it before (I am 40. My husband entered us in the contest and knew any recipe of Guy's would be great! I followed it exactly and it was a hit! I even liked it! On a note, it was on the hot side. I will make this again! Thank you Guy! Keep those great recipes coming!

I have made this about 50 to 60 times over the last 1-1/2 years now and used the recipe to a T, my co-workers, friends and family can't get enough of it. This has got to be the best Chili we have ever eatin. I have to agree with VCAYLOR77 the times it takes to make it is a lot longer than is here especially if you roast your peppers and garlic, that makes the taste even better. But,,, I would Highly recommend this Chili to all your family and friends....... It is the best.... Remember,,, with time comes execellence......... IT IS WORTH THE WORK AND WAIT!!!!!!!!!!!!!!!

Spicy and flavorful. Love the variety of meats, peppers and beans! As written, this recipe makes a medium stock pot about 2/3 full so have an army on hand to help you eat! My problem with this recipe lies in the estimates of prep and cook time. With all the veggies to be prepped in this recipe (including putting the poblanos and Anaheims under the broiler to roast, then cooling time before peeling and chopping, the prep time is much more than ten minutes. It's closer to 20-25 minutes. Too, the large amount of delicious beef and pork takes closer to 15 minutes to cook enough before other ingredients are added. Be sure you've got about an hour before you start your simmer time just to get your stuff together and ready to go in the pot.

Won a Chili Cook Off at work with this recipe. It is super yummy. Few changes. Used about half a pound of hardwood smoked bacon. Used grease and crumbled the bacon and added to recipe. Took 15 minutes to carmelize onions. Only used half the chilies to keep heat down. Used Michelob Amber Bock beer. Used a bulk pork sausage that was available from a butcher. Also used a course ground beef and a good quality stir fry beef. Finally, threw in a hand full of semi sweet chocolate chips. Used all the seasonings. Bought what was missing from pantry. Takes some time to prep, but worth the effort. Enjoy!!

This is a new favorite in my house. The heat level is perfect! It is a slow build heat that tapers off quickly. The sausage was a nice change for me. It is excellent.
