So good. I had to switch out the farro for quinoa. I couldn't find it at the small store I went to and didn't have time to stop else where. But the out come was delicious, like a lovely light meal. So healthy. Love your recipes. Some healthy some not.

This was so good, easy, and healthy. The recipe yields quite a bit so it's great for parties or if you want to have leftovers the next day. I ended up with quite a bit of unabsorbed broth at the end, at least 3/4 cup that I poured out.
