    We are BIG olive fans so this was a great treat! I chopped up the left overs and added them to a sandwich the next day cold and it was even better!

    This was a hit, even with the "olive haters". This is excellent to serve at a Tapas Party!

    I blanched the whole baby carrots for a few minutes before adding them. They need to be a little tender - not a lot. They should still have some crunch. The blend of flavors is killer. I agree that the sharpness is drawn out of the pepperocinis. I would be afraid that if left out, the flavors would not be quite so awesome. I buy a combo of olives at the olive bar at my supermarket. That gives me a good blend. I use canned black olives. Best to use pitted so there are no surprises.

    Served this at a football party one Sunday and the whole room raved. Definitely a touchdown.

    I think the carrots are a must, to add more sweetness to an already salty and peppery dish. Suggestion: keep the baby carrots whole (or perhaps cut the largest ones in half, lengthwise but add them to the pan WITH the garlic, onions and red peppers to saute for the full 20 minutes.

    The olives and peperoncini don't need to be cooked, per se, just warmed up. So add those at the 10 minute mark.

    Even folks who didn't think they'd like a side dish of warm olives loved this dish.

    This ROCKED! Even my kids loved it. The cooking somehow mellowed my pepperoncini. I DID QUARTER THE CARROTS. The picture appears to have them quartered and it certainly helps cooking them. I will make this over and over. My daughter came home from school today and asked if I could make them again tonight. We just had them last night! However, since I loved them so much I will comply. THANKS GUY !

    these were fantastic!!!! i had no time so i got carrots and onions from the salad bar. this took only the 20 minutes and got rave reviews!!!!!! there was nothing left on the plate. great job guy!!! glad you won the contest, your show is great and you even provide a few laughs in the process.

    Really good! I hadn't saved this recipe & had to search for it again so I could make it for a party. It was eaten immediately. I did leave the carrot out, but went w/everything else! Great Recipe!
