    We greatly enjoyed these enchiladas! We are trying to make more sauces from scratch, rather than from cans. This enchilada sauce definitely fits a great sauce from scratch!

    OK so he does say at the end of the recipe to simmer for 30 minutes, MY bad..Love his show!

    I did not find this to be a ton of work. Actually quite simple. I also needed to reduce the bitterness. I used sugar but honey would have been a better choice. Wonderful recipe.

    The sauce is simmering right now. It tastes AWESOME, and I certainly didn't mind the work. But I was surprised after I went to the store and bought the chilis how many there were (about 40 chilis all together with only four cups of boiling water. It took quite a bit of effort to get the chilis through the strainer as it was so thick. I added water to help the process. But it looks exactly like Guy's and I can't wait to pour it over my cheese, onion and black olive enchiladas in a little while!

    For those complaining that it was too much work, DUH!! Its a meal 'from scratch' not from an envelope or can. Cooking actually takes time. If you wanted something quick-then grab your can opener and buy your enchilada sauce. Great food should take time and this recipe was Killer. Guy knows what he's doing. Growing up in El Paso, Tx. this recipe really struck a home-cooking chord with me. Anyone who says otherwise needs to develope some tastebuds then begin reviewing. That is all.

    Wonderful! WOOO spicy! 5 1/2 pounds of meat is way to much. I halves the recipe. The video on here didn't show the direction's for the enchilada sauce so I sort of wing'd it. I followed the ingredients but wasn't sure what all I needed to add to the blender. I did the dried chili's with water.. then added everything else to a saute pan (with the drained chili water and simmered it till the meat in the oven was done.. Then put all the saute pan plus the meat liquid to the blender again... I added a can of tomato sauce and honey to cut the bitterness.. Turned out great... Very Very time consuming.. I only gave it four stars due to the extra work I had to do with the sauce, plus the meat amount being so off.. Makes a ton even when I halved it, I ended up with a large and a small casserole dish full!

    This was amazing. The meat turned out so fantastic, I couldn't believe it. I also added a red jalapeno to my vegetable mix.

    Add chipotle pepper while cooking, it added the flavor that was missing! Very good!!!
