Ohhhhh Mmmmmm wooooow... the flavor the veggies obtain in this dinner, is EXTRAORDINARY...totally beyond works... yes, Guy; there is a serious "party in my mouth" - of course the pork is prodigious as well... And the way the house smells while its cooking, my boys said they smelled it outside before they came in!!! Can't say enough about how FANTASTIC this recipe is!

AWESOME!!!! The best recipe for pork ever. A total hit in my house. I have 2 somewhat picky eaters and both love it. I make the veggies all the time, but mix it up a little... Add some sweet potatoes, mushrooms. Great eats. Thanks Guy & Matthew

This has become my "go to" recipe for guests. I'm getting ready to make it again this afternoon. The last two families I served it to are still talking about how wonderful it is! And...oh how great the house smells! Thanks, Guy!

"TOP NOTCH" This recipe is an instant home run, full of flavor and easy to make. The rub is right on and the roast comes out delicious and moist all the way through. The veggies are AWESOME, smells so good you want to dig in before they are even cooked. I served the meal with a cooked butternut squash which was a great complement to the meal, but there is so much food you don't even need a side dish. Gave this recipe 5 stars but I would give it 10 if that was possible!

What can I say? This is my favourite type of recipe: easy, nutritious, seasonal, DELICIOUS! Loved it and will definitely be making it again (--next weekend, in fact. I was tempted to sear the pork in a cast-iron pan on top of the stove, but decided to do the recipe just as directed. No need to sear--the roast was lovely.

Made this last year for Christmas day dinner and it was requested for Christmas dinner this year at our Thanksgiving gathering! Doing some of the prep work ahead of time so I can get cooking on Christmas morning. Don't skip the last step in making the gravy...it really does finish off this wonderful dish. Also, if you don't have a mortar pestle to make the rub, you can use a small food processor and get the same results in less time.

The show itself was fantastic! I'm a Matthew fan but thought their teamwork and friendship created a great segment while cooking this meal. I made the veggies and the pork roast. I love pesto on anything, so knew before I started this was going to taste good. I followed the instructions completely except for the rack - I used a flat rack and set it on top of the veggies, with no issues. My roast was cooked in the time noted in the recipe, but I wanted the roast to have a little more color, so I did put it under the broiler for just a couple minutes to get a nice golden brown. Very tasty, will make your house smell fantastic, and the GRAVY. Don't skip that step...totally worth it!

I loved it. Had to invite the family over to be guinea pigs while I tried something new and it was a hit. The only thing I might recommend is cutting the cheyenne in half, for those that like a milder spiced meal.
