    Amazing!!! I made this dish for a special dinner for my husband and he thought it was the best pork dish he had ever had! The pork loin I used was only 1 lb so I put the veggies in 20 min before the pork so they would not be undercooked. I highly recommend this recipe!

    This was so very good! The pork was perfectly seasoned and the veggies - OMG! Finicky eaters will be overjoyed by the flavor and texture of the veg...
    A dish that is worthy of company - even the boss!

    A Food gasm was had by all!! Made a memorable Christmas Dinner and sipping the JKL Margarita's while prepping was fun too! Loved the episode featuring the one and only Matthew McConnaughey! What a great friendship to observe! This is my first review, I had to say thanks for doing that show, I've shared these 2 recipes with everyone I know!!

    The roast taste great - after 30 minutes at 425 and 3 hours at 325, the roast was finally done but the vegetables were undercooked. I will cook again, however, I will alter the vegetable arrangement into possibly a seperate pan.

    I made this recipe for my New Years Eve guests and they loved it. I made it to the tee! What a mouth watering dish!! That pesto sauce is just awesome!!! Thanks Guy and Matthew for a wonderful dish - loved the show. I can't wait to make a pork sandwich!
    Addendum: I took a crusty bread cut it in half. Buttered each side and broiled. Placed a mixture of mayo and dijon mustard on one side of the bread and topped it with the pork on one side placed the gruyere cheese on the other side. Placed back in the over to warm. Added a tad of the leftover pesto sauce in the middle. Now that was a sandwich!!!

    Zoowie. Excellent. Got RAVEs from the family. Tried it out on them first before serving for group gathering later.

    I was looking for a new way to serve pork.

    I did a little change up with veggies. Instead of Zucchini (which would have disappeared I went with more of a mostly root vegetable idea: Butternut squash, Parsnips, Turnips, Onion, Potatoes, Carrots, plus smaller celery for flavor and Tomatoes (used Romas a MUST as they almost disappear but add wonderful flavor. The Pesto also a must as all the oil of the Pesto coats the veggies with the Olive Oil. Did not use as much sugar as it called for on the Pork.

    Everyone asking for more broth...was a marvelous combination.

    I think next time I will try this with a cut of Beef...maybe adding a bit of Worcestershire to rub on meat.

    I made this recipe on Christmas Eve after having watched the episode a few days earlier. I omitted the tomatoes, grapeseed oil, and pesto since I didn't have them. The end result was absolutely delicious! The pan sauce is to die for, now that I read the additional reviews I will make sure that I have the pesto. I will be making this again and again!

    WOW! I was not expecting this to come out as good as it did, and boy was I surprised! Followed recipe to a "t" with the exception of the roasting pan; I used a 6 qt dutch oven instead, placing the pork roast on top of the veggies, which increased the cooking time (I need to replace my roasting pan after using it on a camp bbq and basically burning out the bottom of the pan!. But the flavor was absolutely fantastic, with the garlic, rosemary, and cayenne on the pork nicely but lightly flavoring the jus yet not being too heavy on the pork itself. The pesto really gave the veggies that extra OOMPH in flavor too. This will be a new standard for pork roasts for me and I will easily adapt to one of my meals this summer at Lake Powell..via an aluminum roasting tin on the houseboat bbq!
