I don't normally make complicated recipes, but I figured I would try this since I like Matthew. The meat was a little peppery but not so much that it was not tolerable. My whole family (one who is a cook raved about this mean when we made it for Christmas dinner. I'm rather bummed because it's almost gone and I am craving it.

I've been making pork roast for Christmas dinner for more than 20 years. My family said this was the best meal ever! Awesome flavor, veggies to die for. Thanks Guy and Matt.

This recipe was super easy!! I added parsnips to the root veggie combo and placed the meat on a different style rack because I didn't have the V-Rack - I used a metal cookie cooler rack and it worked beauifully. My family loved this and even the kiddos loved the veggies. It's a hit. Would definatley do this again.

I saw Guy prepare this on TV over the Thanksgiving holiday and decided I would make it for Christmas Eve. I did something a little differently than the recipe (because I thought that's the way Guy made it when I saw it on TV. I trussed a bone in pork roast and stuffed it with the pesto. I didn't add anymore pesto to the veggies because I knew that some from the meat would drip on the veggies and I didn't want it to be too strong. It was by far the best meal I think I've every made. The meat was moist and flavorful and the veggies were the best. My husband said it was a gourmet meal. I will definitely make this again - probably to impress my friends.

Cooked this tonight for my family and they LOVED it! I agree with the previous commentor, super easy and filled with bold flavors. Perfect company meal because it doesn't require a lot of time & attention as well as not a lot of clean up. We also made the farro salad w/citrus vingerette and rum ting receipes as well and they were equally delightful. Plan on making this for a holiday meal. Thanks Guy & Matthew--from one Texan to another.

Amazing dish! Huge flavor and super easy. Made it for my Christmas Bunco gathering and everybody loved it! I doubled the recipe (was feeding 12 people and added turnips and parsnips. Will certainly be making this often for my family!
