    These lamb chops were delicious! I also used a bit more olive oil and a touch more salt in the pesto. We had them with oven sweet potato fries and a simple green salad. Quick and easy!

    VERY Tasty!! I cooked the lamb loin chops for 3 min per side on a searing hot grill: came out med to med-rare, a perfect way to enjoy the full flavor profile of the meat. This meat paired very well with a California Bogle 2007 Petite Sirah. Oh the harmony...
    As some of the others suggested, I used a bit more olive oil for the pesto. I don't like thick, dry pesto. I was surprised that for the amount of mint used that only a hint of mint came across in the pesto.

    This was indeed a fast meal, well worth trying if you like lamb.

    I loved that the mint pesto gave you a little of that mint jelly food memory, but with all the nuttiness of pesto. I think the pesto needed a little more olive oil than the 1/4 C recommended, but the flavor is spot-on. My husband and I both truly enjoyed this dinner paired with roasted asparagus and an Ina Garten couscous with pine nuts.

    Made this for a dinner party. It was so easy and tasty. I ran out of time so I grilled the chops to get the grill marks I wanted then pop them in the oven @ 425 for 30 mins. They came out great. I serve it again and again and again...Thanks Guy.

    I made these chops for my brother and sister in law's last night in town yesterday and it was a huge hit! The boys cooked the lamb on the grill along with some asparagus and Bobby Flay's Grilled Sweet Potato and Green onion salad. Excellent meal but the mint pesto was as my husband said, "the STAR of the meal" Will definitely be making this again. Much better than that mint jelly I grew up with. Thanks for all your great recipes.

    We bought a boneless leg of lamb and roasted in the oven. Made slices. We made roasted slices of ciabatta, spead the mint pesto on each piece then topped each with piece of the lamb. Terrific party food and it disappeared faster than the shrimp did! The mint sauce can be modified to fit your taste buds. Regardless...tremendous flavor and aroma!
