    I have made different mac n cheese dishes before but, this is awesome. I did modify mine just a little. Instead of shallots, I used sliced green onions and sauteed them and the garlic a little with olive oil. I also sliced all beef hot dogs and browned in a pan and added to the mix. I also added fresh broccoli cut into small bites. I left out the bacon as my wife does not eat pork but it sounded great to me. This ended up great and the hot dogs were a good addition.

    Made this last night and it came out really good. One thing I don't understand. Why do you want to coat the garlic/shallot mixture in flour? I understand adding the flour, but why there? It seemed to just dry out the mixture. Has me thinking that maybe I did that part wrong somehow. The final result was great so if I did do something wrong it couldn't have been that big a deal.

    This is hands down the best mac and cheese I've had to date. Just one word of caution.....because of the large amount of heavy cream in this recipe it's best to bake it immediately after cooking everything together beacuse of how much the oil/fat separates out of the cheese sauce. I recently made it a few days in advance and refrigerated it..and after everyone ate..they kept asking how much butter was in it...lol

    I wouldn't go as far as to say this recipe is easy, however it is delicious. It goes beyond mac and cheese. Sorry Ina and Alton, your versions are good but you two need to try this one yourselves!

    This is my favorite mac and cheese recipe by far. I've made Alton's and Paula's version and this beats them out. I feel like a lot of them turn out too eggy and not cheesy enough (yes even with proper tempering... this one was perfect... plenty of sauce after baking still. I had to make a few substitutions, didn't have a shallot so used an onion. Also used a combination of shredded cheddar's that were already prepared and cavatappi pasta (which I highly recommend...turned out perfect. My boyfriend almost proposed to me after eating it.... almost ;

    Made this last night. It was VERY tasty, although maybe a little bland, but I fixed this with about 1/4 tsp of cayenne pepper in the sauce (and serving with a sprinkle of hot sauce. The roasted garlic & shallots were fantastic in the bechamel sauce! I especially liked the panko mixture sprinkled on top, although I would make more of it next time, I was left with wanting more on there. I did 1/2 the recipe and used an 8x8 glass dish, worked great. Make sure you used GOOD pasta, not the store brand stuff, and get it off the stove and drained while still slightly under cooked, as the cheese mixture will finish cooking it in the oven. I went about 30 mins in the oven, I wanted a slight crunch on the top, it was perfect. My only complaint (and I've had this problem with other recipes is that the oil/grease separates out if you try to re-heat it the next day, say in the microwave. Looks pretty nasty in the bottom of the plate. I'll make this again.

    Every New Year's Day I make a different mac and cheese recipe, and now I've found a real keeper. My family absolutely loved this. I added a little extra pepper jack cheese, a small amount (perhaps 1-2 oz of gruyere cheese, and a pinch of grated parmesan to the creamy mixture. Then once in the baking pan, I added a light layer of grated parmesan and then topped it off with the panko mixture. With the pepper jack, it was a little spicy for some so I'm sure it would be just as good if you substitute more cheddar, gruyere, or another kind of milder cheese. Enjoy!

    Yummy, yummy, yummy. I added extra pepper jack cheese, and in the future will reverse the cheddar and pepper jack amounts. I added leftover turkey roast and it definitely added piazza to the turkey. Can't wait to make it again.

    The 1st of his recipes I wasn't thrilled with, followed it exactly & I thought it was bland & a lot of work (and calories & expense for what it tasted like. As I quickly jotted the ingredients to shop, it didn't hit me until later that the 4 cups of heavy cream are actually the whole darn quart! But the panko adds a nice crunch so you don't hear your arteries clogging shut, lol!
