I made this for a Super Bowl party today. It is excellent--the best mac 'n' cheese I've ever had. Everything about it was spot-on. I did the recipe almost exactly as it's written, except I'm a bacon freak, so I did 5 strips of thick-cut bacon. I followed everything else to a t. I don't understand why some of the other reviews say that it was too greasy. If it turns out greasy, I think it's safe to assume that you messed it up. Mine wasn't greasy at all. The other complaint that baffles me is that it's too bland. If you season the cheese sauce with salt and pepper to taste (like the recipe says it won't be bland. If you follow the recipe, you won't be disappointed. Just remember that it might be a good idea to serve it in small portions; it is very thick and rich (I like it that way. I think I'll add grilled chicken and broccoli to it the next time I make it, and serve it as a main dish. Maybe I'll just bathe in it....

So so so good!!! I made these with my friends who are 12, and 14! I'm a learning to cook new things because I have loved to cook growing up! So I made this even though it wasn't very easy and took awhile it was amazing!!! Everyone loved it and now it's apart of our family dinners, but guess who's always making it! (:

I thought it tasted great, the only issue my family had with this was the consistency. It was very thick. Maybe this is just our preference but we like our mac and cheese a little more creamy. I will definitely make again and work on a creamier sauce. Great flavor though.

I HAVE NEVER HAD SO MANY COMPLIMENTS ON A DISH I BROUGHT TO CHRISTMAS DINNER, EVERYONE LOVED IT AND BEGGED FOR THE RECIPE, IT WAS ABSOLUTELY DELICIOUS.....THANX SO MUCH FOR SHARING THE RECIPE.

I was so disappointed in this. It was very bland and very greasy. I thought I could make this for a party but I wouldn't want to serve something that heavy. I really wanted this to be great, it sounded so good. My husband will eat most leftovers and this is still sitting in my fridge after 2 days. Not to mention I was trying it out so I only made half the recipe! Plus it took a long time to make with all the prep work as some previsouly mentioned.

This recipe is faantastic!
For some reason it took me about 1 hr 45 min to make, probably because all of the prep you have to do prior (cooking the pasta, bacon, shredding the cheese.
However, it was definitely worth the wait!
I didn't have any shallots so I used 6 garlic cloves instead (my husband and I are garlic lovers!
I also cooked the entire package of bacon (I think it was maybe 10-12 strips to put on top and I used whole wheat penne since that is what we prefer.
I think I will definitely try the ritz crackers or cheese itz for the topping because I didn't really like the panko.
This recipe REALLY doesn't keep well for leftovers. I didn't believe it until I tried it myself and I literally poured several tablespoons of grease off of my single serving. Next time I will probably half the recipe since it is just my husband and I, so we have no leftovers.
Overall, delicious recipe that my husband LOVED. Will definitely be making it again.

omg ditto; this is so good; i also used an onion over a shallot and did pepper jack, cheddar and smoked Gouda----oh la la no regrets---thank you soooo much for this recipe

Oh yes, this is the mac daddy of macaroni and cheese. I did not have any pepper jack cheese, so I used some shredded 6 cheese blend along with the cheddar. It's was awesome. I needed to make a something for my niece who is vegetarian. She loved it and so did everyone else!

OMG !!! Thank you for a killer mac and cheese. I served this for dinner this evening as a main course and it was a huge hit. I used an extra sharp cheddar and the taste, texture and presentation were wonderful. The bacon and panko added just the right amount of crunch to the absolutely smooth and creamy sauce. I have been asked to throw away my old mac and cheese recipe so I am heading for the shredder. Thanks again.
