This was excellent. I even used Minute rice instead of the long grain stuff. it turned out perfectly and was a big hit!

It's amazing how just a little bit of some fresh ingredients can make an ordinary side dish pop out at you. Never would've thought of garlic and lime with rice, but wow, those tastes plus the fresh parsley and cilantro were amazing. I used the leftovers (surprised that I had some! in salads, in a wrap, and again as a side. Might be one of the only ways I'll make rice again! Well, that's going a little far, but it truly is delicious.

So good, I had leftovers so I took the leftover chicken, rice, salsa and served it in some tortillas with sour cream. I will be sure to use this rice recipe in other dishes also, very good.

Wow...that's about all you can say. This was SOOO easy and it packs in SOOO much flavor. I used a mini food processor and added everything in at once, and it's ok - but i'll probably take the time to hand chop it next time to get a slightly better texture. But the flavor is fabulous! It will be our new standard quick rice recipe.
