So well worth the little extra effort it takes to make this! I even made it without the added glaze at the end and just cooked the extra marinade to serve with it! My teenagers all love it.

My husband took his first bite of this chicken and said, "Wow!" I have to agree...this was great! Because making this dish was a last minute idea, I had to use what I had. So I did not follow the recipe exactly. I used 4 boneless, skinless breasts. I was out of orange juice so I used my kids' Sunny D. Seriously! No limes. I did not have rum or chicken broth for the glaze. So I made 1 cup of chicken broth with a cube and used that instead of the rum and broth. No mint in the house either. So you can make substitutions or omissions and it still comes out great! I will definitely make this again. The one thing I would do differently is use lots more than 1/2 cup of the marinade in the pan. I had one leftover chicken breast. I heated it up in the microwave the next day and put on salad. I wish I had more of the sauce for more salad dressing. It was delicious! Thanks, Guy!

I think this would have turned out better if I'd gotten a good sear on the chicken in the pan. As it was, enough marinade remained on the chicken so that it braised rather than searing. Great new way to use the mint in my herb garden, though - I'd give it another try...

Excellent flavor. Fairly easy pre. Also did the yucca - it was delish. Also used the dry rub and marinade on a flank steak that I grilled - WONDERFUL!

I decided to do this as kebabs with chicken breast and it came out amazing! I let the chicken marinate just overnight and it practically melted in your mouth. Everyone loved it! Definately a keeper.
