    It was easy and very good. I have given the reicipe to people after I brought left overs to work. Everyone wanted to know how to make it!

    I followed this recipe until it came to the cooking. I used a whole chiken and cut out the back and layed it open whole on the grill for 45 minutes, turning it twice.

    I tripled this recipe for a big family dinner and grilled 20 boneless breasts instead of baking in the oven. I reserved 1/2 the marinade to baste the chicken while grilling. I broiled the glaze as instructed. The chicken was wonderful - highly recommend!

    The chicken would have been great with just the rub recipe as well. The marinade was great. I used bacardi instead of the dark rum and it worked really well. I didn't care for the glaze and the chicken was great without it.

    This was a big hit at my diner table. First time making a little time consuming but well worth it. Very moist and tender.

    I was so excited to try this recipe when I first saw it. I could taste the mojito sauce melting in my mouth.
    I was a little disappointed when making the recipe - it's a little more complicated than it seems at first. The sauces had a little too much liquor flavor for me. I will make the recipe again, but will use less rum.

    I see I'm outnumbered in the reviews but I was so extremely disappointed with this recipe that I had to put in my 2 cents review. The glaze was so awful that we didn't eat it. I don't know if it was the rum or the overly salted taste (2 Tablespoons is way too much salt for this rub Threw out the rest of the chicken. Will not make again.

    Outstanding taste...really zesty and unusual. We are HUGE fans of Guy and have tried many of his dishes, all of which are GREAT, but this is the first one I've felt compelled to review.

    One warning, this isn't a dish you can prepare just before eating. It's just one of those things that you have to start early in the day to adequately prepare. And be sure that you have sharp poultry scissors, my kitchen shears did NOT want to do the trick!

    The end result wasn't bad, but the expense and prep was not worth it. I beleive a better tasting meal could be done with far less ingredients and effort. Keep it up Guy... Only my opinion...Andy
