I've always been very skeptical about baking a whole chicken...(it has never turned out good I was so suprised with the outcome I just had to write a review. There's one thing that needed twiking...the bakeing time. Stick with getting the ideal Temperature(165 F which takes about 45mn to an hour before it's fulling cooked.
Besides that this was the best chicken I've ever tasted in my life time.

Very good, but had to be cooked at a higher temp for a longer time. I cooked my chicken at 350 for about 45 mins otherwise, very tasty and moist.

I love the flavor of the rum, the texture, and the flavor and juiciness of the chicken.

Marinade the day before and I added fresh thyme and substituted fresh garlic and onion for powder form. Turned out great.

This recipe was good and had a nice flavor. The glaze had alot to be desired, we didn't even use it after tasting the bland flavor, we are still trying to figure out how to spice this up a bit, perhaps using the real mojito mix would work. This recipe would be best if marinated longer and put in a smoker or on a grill. It calls for the chicken to be put in a 300 degree oven for 25 min after searing, the oven temp. needs to be increased or the chicken left in longer. Again this recipe was very flavorful.

This chicken was fantastic. I can't wait for better weather so I can barbecue the chicken. I also used boneless chicken breasts, but with the skin on so I could sear it and get good color. I also marinated overnight to maximize the flavor. For those who didn't like the glaze, try adding the juice of one lime. That's what it was missing. Mojito's are rum lime and mint. Guy's an awesome chef and I hope he will throw out some more healthy recipes.

I agree with all of the reviewers who loved this. They've pretty much said it all for me. I loved that there wasn't just one flavor that overwhelmed the others, but it was definitely flavorful. I marinated mine overnight to get the most intensity out of the marinade. This was MONEY!

Expected slightly more flavor and it sort of faded. Generally good, though, and a nice change of pace for chicken.
