I couldn't, for the life of me, get my corn tortillas to roll w/o breaking--I put some in moist paper towls and put in the microwave for a few seconds--any ideas? I simply couldn't get them as tightly rolled as the picture. The flavor was great though!

I thought the taquito filling was a good flavor - the cumin and the tequila in particular gave it a nice punch. And I like having the potatoes in there too.

My number one complaint about this recipe - the gross underestimation of the amount of time it takes! 25 minutes prep and 5 minutes cooking is what the recipe says.

Well, if you have to dice all those ingredients (make sure you wear gloves before seeding the jalapenos everyone, by the way - my hands were burning for hours, but rubbing alcohol helped and then wait for the chicken to cook through and then deglaze the pan and then let the liquids cook down, and let it cool, and THEN wrap it all up in warmed tortillas, well I think you could get all that done in 25 minutes IF you were super ridiculously fast in the kitchen (and had a hotter stove than mine. But even then, I STILL don't see how you could get your tomatillos roasted, and your avocados pureed, and get all those rolled taquitos cooked in just 5 minutes....

Okay, so my tortillas didn't want to roll. I fried them flat and made tostadas. The kids all had two helpings. This is a come back recipe, was easy to make, and I will actually never roll them we enjoyed them as tostadas so much.

Pretty darn good...took a little longer to prep than anticipated, but mostly thanks to the 2 year old! Watch your salt & pepper, I didn't add enough the first time, so it was a little bland, but kicked it up the second time and.....spectacular!!! Also, left a little of the jap seeds....KICKIN'!!! Did use my own salsa and guac dip, mine just can't be beat!
