    I was crying after I made this for my husband. I will never use another of Guys recipes. Hopefully Alton will come up with a great tamale recipe I can use.

    Ok.....honestly this was nothing like a real authentic tasting tamale, first...the masa was too salty and did not come out anything like an original masa that should be made for tamales, also the Masa is made with lard not BUTTER! and as for the Enchilada Sauce? I dont think so!!! Come on Guy, you can do better than that!

    Anyway, I guess it works if you like a very, very amiercan version of a tamale, just nothing like an authentic tamale I was raised eating. I gave you a one star because of the Masa and because of the Enchilada Sause you called for.

    And the rice drink is called HORCHATA, NOT agua de Palapa Joe - HORCHATA is the orginal name (Rice Drink

    The beef for this was absolutely awesome however the 3 tablespoons of salt that they're asking you to put into the masa mix definitely has to be an error because this was way too salty and we couldn't eat them. After the first batch of tamales came out of the steamer and we realized it probably should be 3 teaspoons, not tablespoons, we ditched the rest of the masa mix and made beef quesadillas with the rest of the beef. The meat was awesome and next time we will adjust the salt. No where near as hard to make as I envisioned.

    I didn't make these but couldn't resist commenting on how his sister Morgan, a known vegetarian, was on this show saying "yum" about this menu. She didn't eat anything, but she's doing a disservice to both Guy's talents and her beliefs by participating in this manner.

    I had never made tamales before, and this recipe was a great first attempt. I used left over roast beef and they turned out great. It made enough to last for several days. Excellent!

    My first tamale experience, and they turned out great. Not nearly as difficult as I'd expected. I did make my own chipotle enchilada sauce rather than using store bought, and followed the reviews and reduced salt to 2 tsp, rather than 3 Tablespoons. Delicious. Served it with a side of tomato/avocado salad, and it was excellent. Thanks Guy!

    Not only were these easy, they were authentic and FANTASTIC!!! Do adust the salt as other reviews suggest though. Thanks for the recipe Guy.

    My husband is from TX, loves tamales. I was always a little leary of making them as it seamed really difficult. I followed the tsp directions from the reviews, not the recipe. I used pulled pork. I thought they were very dry. My husband loved them. I didn't use the verde, as I didn't have any. Next time I will make the verde sauce, not the cilantro. I guess the TX way is to put chili on top, next time I will make chili along with them. Try them, their really easy.

    The masa was way to salty and liquidy. Next time I'll only use 2 teaspoons of salt and add less water. The filling was good though and the cilantro cream sauce was surprisingly very yummy.
