Enjoyed this very much. I enjoyed the roasted a little more than the puree but the Misses was just the opposite. Wish I had read the comments. Will definately try adding the parmesan to the puree next time.

Quite delicious! Added a little sour cream and Parmesan and it was even better. Be careful not to over blend them. Loved this better than the mashed potatoes that were served. Definitely don't add the milk! Too runny.

Excellent. Only change was to not add the milk when making the puree as others suggested.

This recipe was Aa-ma-zing! I was a little skeptical so I boiled a few potatoes just in case & I ended up not needing them. (I used them instead for a potato & veggie scramble the next morning
Just like mashed potatoes. It fooled everyone!

Terrific. Don't add milk to blender unless it is too thick. I didn't have enough cauliflower for the amount i needed so boiled a white sweet potato along with the cauliflower. Result was a huge success...even with those who claim to hate cauliflower.

Not bad! I liked it more for the healthfulness of the dish than for the taste. It's also a great substitute for mashed potatoes for anyone on a low carb diet aka South Beach! I liked the texture of part mashed and part lumpy cauliflower.

I used low fat milk and nonfat half and half to cook the cauliflower in and this was not half bad:-. In an attempt to cut calories also used Smart Balance instead of real butter (which I miss of course, who doesn't?. So keep in mind I altered this recipe to avoid a heart attack. Found it to be pretty good despite my changes, would recommend this recipe since every other recipe I looked at for cauliflower added a high fat content which is sad., since I bought fresh cauliflower (only in summer in Ohio can you buy it home-grown and I wanted a healthy recipe.

Loved the simplicity of this recipe. It is a great alternative to mashed potatos or just a great way to enjoy cauliflower that I've never seen before.
