I only had skim milk and it was still great. Very smooth and having the roasted pieces on top really made the dish.
The dogs got the left over milk and cauliflower bits on their food and loved it :-

I loved it! I also used the leftover milk from the cauliflower and cooked beets in it and make a beets puree and it was deliciuos!

I use a food processor instead of the blender. Also be careful of covered-cauliflower overflowing when going to boil.

I didn't have whole milk in the fridge so I used 1% milk... still AMAZINGLY delicious. I'm really very impressed with how simple, healthy and yummy this recipe is. Forget mashed potatoes... this is my new go to recipe for a side dish.

I have openly hated cauliflower my whole life, but this recipe has completely changed my tune. I took other users' advice and added a couple cloves of garlic during the simmer and it was amazing!
Dare I say, I might actually prefer this recipe to mashed potatoes. This is crazy. Thanks, Guy!!!

Did a lighter take on this. Used skim milk, fresh garlic in the boil, and dill in the food processor with a little sweet butter so utterly amazing!!!!!

I agree. This is an awesome recipe, however the only way I could talk my boyfriend into trying it as a potato substitute was if I added some cheese so I added about 1/4 cup grated parmesan and it actually added some really nice flavour to the cauliflower. I also simmered two garlic cloves with the cauliflower and blended them in with the rest. I loved it, and compared to mashed potatoes, it's relatively guilt free.

This is so good! Nice and creamy texture yet contrasted with the nutty, roasted cauliflower on top. A perfect substitute for mashed potatoes. A wonderful side dish.

I AM NOT REALLY A FAN OF CAULIFLOWER AND WE EAT TOO MUCH CHEESE AS IT IS!! SO THIS IS FABULOUSLY TASTING AND GREAT WAY TO AVOID MASHED POTATOES ONCE AND A GREAT WAY TO SERVE IT WITHOUT CHEESE! I ADDED TOO MUCH MILK AND AM GOING TO TRY AND CUT THE BUTTER IN HALF AND SEE HOW IT TURNS OUT NEXT TIME! GARLIC IS A SUPER GREAT ADDITION. WE WILL BE MAKING THIS DISH FOR MANY YEARS TO COME!!!! This was so easy to make, and so tasty. Didn't have any whole milk, so used a can of evaporated milk diluted with water to equal the whole milk. This provided a rich creamy flavor. The fresh cauliflower had a hint of sweetness that was delicious. I'd choose this dish over mashed potatoes anytime.
