Cauliflower is not my favorite vegetable, but OMG. This is the best pureed cauliflower I have ever had. I added a little bit of good olive oil and gray salt with the dish and it turn out delicious!!

I cooked dinner for my family one night because my mom had a procedure done. So, I wanted something light and delicious for a side dish. It was pretty good. I just didn't like the roasted cauliflower. And the chives with the puree took it to another level and it made it better!

This was SO good. I made this for my dad as a side dish for a roasted salmon since he is getting a bunch of dental work done and it is so delish! It is a bit sweet from roasting, but so good. I put some fresh thyme and grated garlic in it along with a little bit of butter. This is a very good side dish for really any meal.

Never liked cauliflower, but have just started a low-card diet and this recipe rocked! I used a pinch of nutmeg and it gave it that taste, that delicious taste that makes you say, "Ummmmmm goooooooood, what is that?"

This cauliflower recipe was so yummy! I have to say I was a little bit skeptical and really didn't think that these were going to be as delicous as they were. I would definately say that they are just as good if not better than mashed potatoes and they were so easy to make. I used fat free milk because that's what I always keep in the fridge and they turned out wonderfully. I've often tried 5 star recipes off of foodnetwork.com and thought that they didn't deserve all five stars, but this recipe definately does. It's easy, delicious, and healthy if you use a lower fat milk (even with whole milk, they're more healthy than mashed potatoes I'm sure I'll be making these again and again!

I have made this twice and it is awesome!! I have thouhg tried it with 1% milk, and even soy milk, it works with both and we enjoy it. I am watching the carbs. I do have a question if anyone knows> It comes out thin, and I didn't add any liquid, any ideas how to thicken it?

This is a great recipe. I added roasted garlic and grated parmesan cheese during the puree process. I also used more butter than this recipe calls for. Our kid's thought they were mashed potato's. I was happy to find a new way to make cauliflower. Loved the taste!

I halved this recipe since there were only four of us and it was the perfect amount. We had guests and they loved it...one of them asked me to email him the recipe. It's easy to make and nice and light!

Cooking the cauliflower in milk rather than water gave this recipe a creamier, more potato - y flavor. Curious looks - and wrinkled noses - when I explained the recipe, but lots of semi-surprised compliments after tasting. A real winner with my family. Thanks!

I saw the show when Guy made this and this is what he said about the milk broth; you may or may not need it. It depends on how thick you like it. He also said that you can "go where you like" with the butter. I do plan to make it because it looked and sounded so good. I will review it again when I do.
