My son's 10th grade foods class made these for their 1st qtr final and they were delicious! The boys were so proud of themselves, the teachers were even asking for the recipe. I loved loved loved the the flavors of this quesadilla. The roasted corn with chipotle and of course, melted cheese was amazing. Great for casual dinner parties. You can prepare ingredients beforehand and then assemble and grill quesadilla as needed.

This took a little longer to make than I would have wanted, but the result was very good. The recipe ended up making two HUGE quesadillas, so we had some left over for lunch the next day. My husband is a meat person, so he thinks the recipe would benefit with a little chicken next time I make it. We made it without the sour cream or any sauces, and it was just fine by itself. Thanks Guy for another great recipe!

I stacked and layered this mixture with 3 tortillas like a lasagne and it was fabulous. I used one can of canned corn instead of roasting fresh and spread butter atop the top tortilla , sprinkled with chile powder then baked . Try it you'll love it!!

These were awesome. . .a great blend of flavors. Should've made a double batch. The chipotle sour cream was the perfect compliment.

These are fabulous! Perfect marriage of Mexican flavors. I thought they would be an appetizer, but these were definately a full meal! I feel stuffed from half of one!

MY FAMILY LOVES THIS RECIPE. WE'VE MADE IT ON SEVERAL OCCASIONS, NEVER ANY LEFT EVEN WHEN IT'S DOUBLED. THERE ARE A LOT OF STEPS, BUT WORTH EVERY MINUTE OF THE PREP TIME!

Oh, do I love Guy's recipes! This was delicious, although the sauce was HOT HOT HOTTER than it should have been so maybe my particular can of Chipotle in Adobo was intended for fire eaters. This was great with the Tijuana Kitchen Rice and fresh mango slices on the side.
