    By the way, I had no problem finding the achiote seeds/arratto seeds at Wal-Mart in the hispanic food isle...for anyone looking for them.

    Fixed this tonight and I was surpized at how moist and tender tri-tip was. I have avoided this cut of meat in the store for years, but decided to give it a try. Thanks Guy for your tips and recipes. I love to cook and this is one more dish I can add to my menu.

    I'm From Santa Maria, Usualy Tri Tip is cooked on a Pit over RED OAK, That ads some flavor. Here in town everyone I know that does a big pit on sundays to sell tri tip sandwiches uses Suzie Q's Santa Maria seasoning usually nothing else maybe beer marinade for a night. Guys recipe good, but I like our way better.

    Tri tip roasts are very under-rated. This recipe is great as long as you can find achiote seeds (arratto seeds can be substituted and easy/quick.

    loved it,but now I can't find any of them at the local Costco,is there any other stores selling it????or can I order it on line?

    I marinated this for the full 48 hours for a Labor Day barbeque. No trouble finding that Achiote Seeds in Arizona.They do stain so be careful but the flavor is amazing. It was a huge hit...everyone loved it and kept going back for more ! Served it with Alex's Baked Potato Salad and Tyler's Ultimate Baked Beans. Very proud of myself as everyone kept piling on the compliments for a delicious meal. Will make this Tri-Tip again for sure.

    I have no idea what the other person did wrong, this was by far the BEST tri-tip recipe I've ever made. I could not find the achiote seeds so I used achiote paste instead of oil and I was a little worried how it would come out. I let it marinate for 48 hours and grilled it up, nice char on both sides and perfect medium rare finish. Served it with grilled baked potatoes and steamed artichokes. FANTASTIC. If like me you cannot find the Achiote seeds, any mexican grocery store will at least carry the achiote paste, which makes it a bit hard to create the paste that Guy refers to, and so alot of my "paste" fell off, but the flavor permeated all through the meat. Definitely give this a try!
