I add freshly grated parmesan cheese to the bread crumb mixture instead of putting on top of the mozzarella cheese. My husband has always thought my parm chicken is the best of any italian restaurant now he said mine is the better than MY best! Thanks Guy - luv ya!

By far the best chicken parmigiana I've ever had. A little prep time but way worth it. A must try for everyone and I'll bet you will make it again and again.

this chicken is the slamma jamma. i love the breading and the flavor of it. i did however cut back on the salt in the brine down to a 1/4 cup instead of 1/2 cup. I dont like cooking with salt to begin with. i know its needed but less is more and definetly still able to taste it in the chicken. the Panko bread crumbs are a must. this is a the way parmigiana should be crunchy moist and flavorful.

BEST EVER CHICKEN PARMESAN!! THERE ARE NOT ENOUGH WORDS TO DESCRIBE HOW DELICIOUS THIS RECIPE IS! MY HUSBAND ASKS FOR IT EVERY WEEK AND BEGS TO HAVE IT TWICE A WEEK. I USE THIN SLICED CHICKEN BREAST TO SAVE TIME ON POUNDING OUT THE CHICKEN AND I USE HUNTS DICED CAN TOMATOES INSTEAD OF PEELING, ETC. ANYONE WANT TO COME TO A DINNER PARTY, BECAUSE I HAVE THE BEST WITH THIS RECIPE!! YOU CANNOT BEAT IT!!!!!

I've cooked this for my girlfriend, who loves chicken parmesan and is very picky about it, many times and she loves it. Very easy and delicious.

The chicken was DELICIOUS!!! I made a few adjustments. I used 1/3 cup salt & sugar, but it was still just a little bit too salty for me, but not inedible. I used a can of spaghetti sauce that I had on hand and also used only the Panko as it is what I had at the moment. Panko gave a tasty crunch that survived the "fry"! Did not have parsley so I left it out. Next time, I will use a tad bit more spice in the bread crumb mixture and just a little less salt in the brine, but otherwise, this chicken was PHENOMENAL!!

This chicken was amazing. The panko gave it SUCH a good crunch. I think soaking it in the brine beforehand also really helped with the flavor. My fiance couldn't stop raving about it! I cannot tell a lie, I used sauce from a jar so I can't comment on the sauce recipe but the chicken was incredible. I would imagine it would be very kid-friendly. A great weekday meal!
