I'll admit, I was a bit skeptical making this dish. I'm mixing the stuff together thinking what the heck am I doing? I've never had red mashed potatoes in my life but they were soooo good. I made them along side the Cuban Pork chops and what a meal! This is the type of recipe to use when you want to wow your friends and family on how great of a cook you are. LOL

I saw this recipe and HAD to try it. All the flavors of the peppers, onions, and deglazing with white wine had to be spot on. So in preparation for a dinner party, I DOUBLED it and it turned out awesome. The only variation was with the butter. I used salted instead of unsalted. But I didn't put as much actual salt in as it called for. Still, a fiesta for the los taste bud-o's!

I actually really liked this recipe. Was scared to try it, but had family over that are Cuban and they definitely approved! I love trying new thing's and Guy....you are the bomb! You know what I made with these mashed potatoes? Your famous Cuban pork chops...man can I talk about those all day! Still my favorite dish and I make it almost once a week! I use the same rub on chicken also. Okay, getting sidetracked! The sofrito potatoes and the cuban pork chops make a great pair in my eyes!

I made these potatoes with the porkchops and everyone loved it!! I recommend this if you would like to spice up your usual mashed potatoes!

This recipe is SUPERB with the Mojo pork chops! The only change I made to this was the red onion, and the red & green bell pepper. I didn't chop them, instead I slightly pureed them in a food processor so they'd be smaller. My boyfriend is not a big fan of texture change in food, and he's def. not very fond of chunky onions, and bell peppers. It was fantastic!

I watched the show with the Cuban pork chops and Sofrito Mashed potatoes. Later that night, I suprised my wife with a great dinner. She loved the potatoes and thought they were some of the best she ever had. Thank for the recipe Guy!!
