i know why skewers were used, we didn't have corn starch. so we doubled the flour. they puffed up more but very tasty and crunchy. the okra came straight out of our garden and fresh as you can get. homemade tempura batter. adding sriracha hot sauce to the batter also did the trick.the tapioca flour from bob mills was hard to find since we live in the country. i have one question. can rice flour be used in place of tapioca flour?

Even IF you don't like okra...give this a try. The recipe is solid for making a good coating on the okra as well as replacing some ingredients/spices with personal tastes. For my husband...made exactly but replaced thyme w roasted garlic and anjeo pepper for cayenne. Thanks. Guy! Annie , Fremont, CA
