Great base recipe! I made the following modifications:

    - Used 88% lean ground beef (didn't have turkey
    - Used spinach (didn't have kale
    - I added 1 14 ounce can of tomato sauce and 1 14 ounce can of petite diced tomatoes. I may use tomato paste next time since this was pretty wet/juicy.
    - I added 1/4 tsp Oregano leaves and 1/4 tsp thyme leaves
    - I chopped up the peppers into large chunks and combined everything into a casserole dish and baked it in the oven at 400 until the top was golden brown and crispy
I skipped the bread crumbs and only added the parmesan

So... while I kind of made something a little different, this is a great base recipe. And the green tomatillo sauce is fantastic. On that, however, I'd recommend adding the lime juice last, and doing it to taste. I used a whole lime and would have preferred it a little less tart. But DON'T skip the jalapeno. It adds essential flavor, and I got no heat out of one. I may use two next time.

Sorry, this was a big waste of time. Look at the ingredients for the stuffing.....nothing with much outstanding taste! It was blah!! the tomatillo sauce was the only thing that had flavor. i always love Guy's recipes but this one was a waste of time and money.

I loved the recipe but I did make some changes to it. I have never eaten quinoa before so I used wild rice instead. I have also never eaten kale before so I used baby spinach. It came out really nice. Also by accident, I bought flaked parmesan but it worked. It made it a little cheesier, especially when I added it to the top crust.

Super! Best stuffed peppers I've ever made or tasted. Glad to see Fieri doing some healthful dishes with bold flavors he does so well. I followed recipe exactly, but I will use a whole chili next time. Tomatillo sauce was the finishing touch. I purposely made extras of the peppers and the sauce to see how they do after freezing. Thanks, Guy.

Very good, although I did make one minor change. I used half ground turkey and half hot Italian turkey sausage. It gave it a nice kick! Good and good for you! Will make it again!

This is definitely one of the top 10 best things I have ever eaten! It was like a flavor explosion in your mouth!! I will next time use more peppers, I had a lot of leftover meat and bread crumbs! Otherwise, AMAZING!!!

I followed this recipe exactly, and even though I liked the individual components the dish did not work for me overall. The turkey mixture was very good, and I loved the quinoa in it. Mostly, it was the pepper that just didn't work for me. Plus, in my opinion, the panko parmesan mixture added nothing to this dish outside of appearance. I had to adjust the cooking time of the peppers adding about 7-10 minutes. I might make the turkey mixture again, but not with the rest of the recipe.

This recipe resulted into a delicious meal. I have two kids under 7 and both went wild over this dish. My youngest who is our most picky eater ate it up without complaint. She even folded her red pepper at one point put some quinoa stuffing and ate it like a taco. I did make one modification to this recipe and that was to the sauce. I didn't have any tomatillos so I made the sauce without them, which gave me a silky guacamole that everyone liked. Thanks Guy!!
