    Turned out great!!! However, I did make same adjustments to add more liquid to the quinoa and also had to lenghten the cooking time on the peppers. Otherwise, fantastic flavors! I would double the recipe next time and freeze the extras (w/a shortened cooking time to finish again in the oven. Enjoy!

    This was fantastic! I read the other reviews before cooking it. The only thing I was concerned with was the dryness of the quinoa. To prevent that from happening, I cooked it in a little extra broth. We thought it was just right. Neither my wife, nor I, had ever had tomatillos. To have that tangy flavor combined with all the other flavors involved was just perfect. I first did this as a relish. Then I took half of that and pureed it in the blender. Both ways works for us, but I have to say, the pureed version went faster than the chunky. Great Recipe!

    Dried out and awful. Best thing was the sauce! The peppers were too crunchy and stuffing was dry and tasteless. Use the recipe for stuffed peppers on the Ancient Harvest quinoa (regular box. Comes out great...you can add meat if you want. And why does red quinoa cost about $7.50 as compared with the white at $3.49?

    I loved the components of the dish and felt that overall it was good...although the filling inside the pepper was dry. I would suggest maybe cooking it with some sauce mixed into the mixture before cooking.

    I made this on a spur of the moment. I followed the recipe pretty much to the letter. I had unexpected company and it was a hit! My husband and his friend loved it. It tasted healthy and was satisfying even for meat eating guys. The quinoa really makes it a stick to your ribs meal. I will definitely make it again!
