Turkey Hash

6 to 8 servings

  • 4 ounces olive oil
  • 2 red onions, diced
  • 1 red bell pepper, julienne
  • 1 green bell pepper, julienne
  • 2 jalapenos, diced, and seeded
  • 2 pounds ground turkey breast
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 2 pounds red potatoes, sliced thin
  • 1/2 cup Roma tomatoes, diced
  • 1/2 lime

In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent. Add turkey and brown on all sides. Season with salt and pepper.

In a separate pan, add 2 ounces of oil, and fry potatoes in oil until crispy. On a serving plate layer the turkey mixture on top of the crispy potatoes.

Top with diced roma tomatoes and fresh squeezed lime juice.

Awesome way to use up leftover turkey. Also I used small can of diced tomatoes and just drained off the juice. If you have leftover dressing and no gravy just slice it and pan sear it and serve this on top instead of using potatoes. item not reviewed by moderator and published

I made this today and was amazed as to how good it was. My family loved it! I too skipped the jalapenos, but did buy one just in case someone wanted their portion with it. I also added the garlic. I fried some eggs and put them on top. My husband said it was definitely a TOP 5 on his breakfast list! I highly recommend this recipe. We all loved this. I left out the jalapenos for the old folks, but used green salsa on top of mine, so it had the kick I was looking for. Fingerling potatoes fried up easy and quick. The nice surprise was this recipe can be completed in around 30 minutes, so it's super fast and easy. Had it for dinner, next time I'm having for breakfast with fried egg. Absolutely Excellent!! I really have fun trying & creating new recipes & this was just what I was looking for. Even though I am at my correct weight, physically active, I just got out of the hospital, diagnosed w/high BP, high cholesterol. My Dr. advised the Mediterranean Diet. I was just hoping my husband would be willing to eat new recipes. The Turkey Hash was my first, also stepping away from my traditional turkey leftover recipes. I do believe it fits into the Med. Diet category. I did add garlic & used spanish paprika. We both LOVED it!! I thought - with the tomatoes, lime, paprika, should I add cumin? My husband said - "NO - Don't change a thing!
