    I was having some friends over for dinner who tend to eat out alot, so I wanted to make them some comfort food. Instead of plain old meatloaf, I tried this. It was a hit. Everyone loved the stuffing. Everyone had at least 2 pices each and the guys had 3! I was hesitant about the jalepenos making the dish too spicy. I was wrong, it was just right. I also used all hamburger when I made it. I found it to still be moist even without the ground pork. The meatloaf also came out looking very fancy especially when sliced. I was complimented all night on how great it tasted and looked. Thanks Guy I will definitely be making this again.

    I love cornbread but hate meatloaf so I thought I'd give it a try. Everyone loved it, even my kids, who are young. Guy's a genius!

    I made this the first time without stuffing because we didn't have cornbread for stuffing and have been making this way since then! The flavor is great! It's very rich and moist, my husband loves it and requests it often!

    Followed instructions as directed, must use pork & beef mixed for moisture not to mention flavor.Made an Apricot Chutney served warm on top , Off The Map.
    Has become a regular.

    I searched this recipe simply because I had 1/2 a pan of leftover 3 cheese jalapeno corn bread. So this is what I used in place of the corn muffins. I think next time I will add some good salsa the last half hour or so and let it cook down over the top and then top with the cheese.

    So, I only had ground turkey on hand, so I used that for the whole three pounds and since I am not a jalapeno fan - I substituted chipotle peppers. The turkey was okay - just not enough moisture for the long cooking time. The chipotles - which were in the stuffing, in the meat and in the topping cheese (yes, I love them that much!! were perfect.
    Next time, and there will be a next time, I will use the recipes pork and beef mixture and I will decrease the cooking time - maybe 1 3/4 hours, check the temp and then add the cheese.

    Not to mention clean-up. Give yourself more time than you think you'll need to prep. Stuffing was tasty but the meat was average. Sorry, Guy! I still love you!

    I do not usually care for meatloaf but my husband wanted to try this one and I am glad we did! It wasn't very hard to make, it took some steps but they weren't difficult, and it turned out delicious. It looks really fancy, and it had great flavor. Mine was also a little bit dry but I think next time I will lower the cooking time some (because it was definitely hot enough at the receipe time and temperature and use hamburger that is not quite as lean. I will definitely be making this again! Delicious.
