    This was a delicious alternative to the average meatloaf. My husband and I both loved it and will definitely be making it again. I omitted the red pepper, jalapenos and dry mustard and added fresh dill and a little extra ketchup. Fabulous! It was fairly simple to make, not as overwhleming as it first looked upon reading the recipe.

    Well, I LOVED the presentation by the Chef on the show, the meatloaf looked divine! The trouble for me was that the stuffing was too sweet. Between the cornbread and the red peppers, I was disappointed to bite into "MEATloaf" and taste sweet breading. I would almost make this again because of such a yummy look to the meatloaf but I am going to stick to traditional meatloaf when I go through the troubles of preparation. For anyone who wants variety to meatloaf and likes that added 'sweet' idea, this recipe could be fabulous for you! Enjoy!

    This meatloaf was great. The prep time was about 40 minutes total and with an hour and a half to cook allow yourself some time, but it is worth every bit of it. I was so pleased with this meatloaf I wanted to take a picture and share it with everyone.

    Made this meal for Father's Day (well, it was my idea anyway - my husband works in a restaurant and chops veggies MUCH better than I do.

    We used chorizo for the pork - fantastic flavor! We also used pepper jack slices instead of Cheddar which I think made it a bit "classier." The meatloaf slices look very nice and impressive. Add a baked potato and house salad and it looks like something you'd expect to pay almost 15 bucks for at a restaurant.

    We made just half a batch for the two of us. An extra step for us was making some cornbread first, but the extra pieces made for a good snack while waiting.

    I will make this again! I might even do it myself next time (if I have to :P

    This is just amazing meatloaf; i really messed up and burned the heck out of it, but beneath the blackened crust it was still moist and delicious. If I had one complaint it would be that it's a little salty, but that's not a deal-breaker.
