Directions

Combine equal parts sugar and water and simmer for 20 to 30 minutes. Cool. 

Line a pousse-cafe (shooter) glass with salt. 

Combine the tequila, lemon juice and 1/2 ounce simple syrup in a cocktail shaker. Shake. 

Serve over the sea urchin fillet in the prepared glass.
