Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 large baking potato, baked, peeled, and diced
- Kosher salt and freshly cracked black pepper
Directions
In a heavy medium skillet, heat 1 tablespoon olive oil over medium heat. Add onions and saute until softened and caramelized. Remove onions from skillet. Add remaining tablespoon oil to skillet and heat. Add diced potatoes in an even layer in the skillet, season with salt and pepper and cook until the potatoes begin to brown on the bottom, 6 to 7 minutes, shaking the pan occasionally to prevent sticking. Add onions back to skillet, press into a pancake. Season with salt and pepper.

I made this a few months ago and it was so delicious! I used my food processor to chop my potato and I also added green onions because I like the onion flavor.

I had a left over leek, 1 shallot and two potatoes and was looking for a simple has browns recipe. This was it.
My advice, don't rush the onions, you want them to brown, not burn.
Cut up the potato in pieces no bigger than 1 inch and put them in cold water to rinse the starch off while the onions are caramelizing. Remove potatoes with a slotted spoon and drain on paper towels before putting them in the pan.
This recipe shows the importance of cooking the onions separate from the potatoes and putting them together at the end, for perfection.

This is a great hash brown recipe!! Delicious, easy, and even my picky 3 year olds loved it!! This will go in my recipe box and used for years to come!!
