    I made a gluten free version using rice flour tapioca flour 2T of arrowroot and 2 T of guar gum. OH MY!!!! Super Yummy!

    The cake tasted very good but it was dry. This cake has almost no moisture to it. I am making it again tonight and I will add 2/3 cups of boiling water. The water will make it moist and should eliminate the crunchiness.

    This cake is delicious!!!!!!!!! I wish the recipe had a picture so that you can see how awesome that this is. My only complaint is that the sides of the cake are crunchy and hard. This is why I gave the recipe 4 stars.
