I made this with Morning Star's meal started meat substitute and it was delicious, even to the meat eaters. Next time I'm going to try stuffing red peppers.

I loved the versatility of this dish! I used ground chicken, fire roasted diced tomatoes, and barley instead of beef, diced tomatoes, and bulgar. It was absolutely tasty! Serve it with crusty sourdough bread and it is a complete meal!!

I tried it with squash calabaza instead and I think it would go better with yellow squash or red peppers. Absolutely loved the stuffing!

I'm so glad to find this recipe, this was my favorite meal in my country, but with rice, they use a special tool to empty the zucchini which I can not find right now, I will cook it with rice, mint, lot of garlic, beef, tomatoes, hot pepper.. interesting americanized way to cook this meal.

Had a friend of the family over and he, my husband, 4-year old daughter and I all LOVED these. Ellie is terrific.. the seasoning was perfect. The zucchini fit exactly in the pan as described. Need more recipes like this.

These were hearty, healthy and wonderful. I cut the zucchini in half and cored out the middle, stuffing them that way (like little boats. I also added a little bit of goat cheese on the top right at the last few minutes of cooking. My husband was scared of them at first ("raisins? bulgur??" but he just loved them. Yay, Ellie!
