These are sooooo good! I make them every summer with green beans out of my garden. IMO the roasted nuts are what puts it over the top. It's January now, but I have some frozen garden beans in my freezer and I'm going to have this recipe with some baby back ribs and pretend it's summer time here in Colorado! I give my beans an ice bath too, just like another reviewer, to keep them crisp and dark green. I hate to admit it, but I end up eating them out of the serving bowl on the way to the table.

I was so looking forward to trying this recipe based on all the positive reviews but I was so disappointed. In fact, it might be only one of the few recipes I've made where I'm not sure I will even finish the food. It's that bad. Yikes. Bummer.

This was so yummy!! I tripled the recipe and it turned our great. Also, I boiled the green beans for 4-5 minutes and shocked them in ice cold water and they were still crispy.

This recipe, as is, is delicious! I also use this recipe as the base for variations: my favorite adds cubed freshly boiled potatoes and diced tomatoes. I often leave off the nuts and even sometimes the parsley (especially if kids are on the guest list. I also double the dressing. And btw IMHO, 1/2 pound beans serves 2, not 4.
Do skip the steamer basket! I have read that dropping veggies into boiling water retains as many nutrients as using a steamer basket, and it's quicker and more predictable. A plunge into ice water for a few minutes after parboiling stops the cooking and keeps the beans green.

I tried steaming the beans but I couldn't get them tender so I took out the steamer and dropped them into the boiling water. I only had candied pecans in the house, no walnuts, so I used the pecans. It was WONDERFUL. My husband prefers dishes with no raw onion, but I didn't tell him about it and he gobbled this up, taking seconds, as did I. This will remain in my regular rotation. Yumm!

Very fresh and very nutritious! What can we expect, it's Ellie's of course! :
Next time, i'll steam the green beans for about 12minutes as hubby prefers the beans to be a li'l bit on the soggy side but not too much. I also added almond slivers instead of walnuts as i'm not a fan of the latter.

Loved this dish. My family are big green bean fans but I don't usually do anything to them. They loved this! Yay! I served it cold with baked Talapia and baked potatoes. Great meal! Gonna mix in some asparagus next time as suggested the review below. Yum!

I was looking for an Asparagus salad recipe, and stumbled across this recipe. Still craving Asparagus and my Husband loving Green Beans, I used both! This was delicious, easy and my Husband told me not to lose the recipe. And he is not a fan of asparagus!

This was delicious...I didn't have any parsley so I used everything but that, and it was still super yummy..my husband and father in law went nuts over it. I think the walnuts make this salad!
