Thank you, Ellie for introducing me to healthy, delicious foods that are FUN to make!!! I have made your portobello benedict three times now: (once for my husband and myself, once for my sister inlaw and her family at Thanksgiving last month and again this morning for breakfast as our daughter is home from college for her Christmas break!!! Everyone LOVES this recipe !!! I starting running four months ago and ran my first 5K last month!!! This recipe is a great protein source to help build muscle after a workout, and fast and easy to make!!! Thank you again Ellie for this Delicious and Wonderful recipe that can be made for breakfast, lunch or supper!!! I love your TV recipes, and now I found your videos on line with written recipe!!! Your love for cooking is contagious, thank You Ellie!!!
PS For Christmas yesterday, my husband gave me your Cookbook, "So Easy"!!! I was pleasantly SURPRISED, for I had not included cookbooks on my "list"!!!

Loved the taste of the pesto, egg & mushroom together. This was a great "benedict" for me since I hate hollandaise and runny eggs.

This recipe was super easy & delicious. I just omitted the canadian bacon (trying to eat less meat and it was still was very filling & flavorful. Pair with home fries & toast for a complete meal. The best thing is that this breakfast would have cost over $10 per plate at a restaurant! This probably cost me under $5 for two of us. Sweet!

My boyfriend loves this and he has an aversion to "healthy" food. I didn't have any pesto on hand but it was fine without it. I also used two slices of canadian bacon, and it went so well with the mushroom. I could see myself making this as a dinner one night, it was so tasty and filling.

My husband rated this excellent. The scrambled eggs were great because they were fluffy and tasted like the real thing with half the fat and cholesterol. The canadian bacon and mushroom compliment each other so well that it makes the entire dish surprisingly excellent. I did use 2 pieces of the canadian bacon to cover the size of the mushroom. I also added a garden fresh slice of tomatoe for the same reason as the other lady, need to use it up. I very much enjoyed the tomatoe on this dish but my husband took it off. I used the pesto and fresh basil sparingly but did enjoy the flavor.
Shame on the person who wrtoe the negative comment regarding how Ellie's recipes have to much fat. This recipe is an excellent weight watchers recipe that probably only has a total of 3 points. It is a shame that someone would go on line to judge Ellie's cooking in general and not rate a recipe that they even tried. It takes a mean person to lower the average rating of a recipe just to vent.

I made this recipe after this clip on Hulu. I don't usually cook breakfast because of time (I commute to school. However, i made it on a weekend and to my surprise it was excellent. I never really used fresh basil before but this recipe made me want to use it more. The texture of the portobello mushroom and canadian bacon go well together. I added two slices of canadian bacon per mushroom because i work out and need a lot of protein. I will definitely make this for breakfast more often.

I made this recipe but made it my own. I used some thyme in the scrambled egg mixture, replaced the basil with parsley, and omitted the pesto. You can taste all of the ingredients. I made it for brunch with homefries and cinnamon rolls and it was a hit with the family!!! Thank you Elie for all of your delicious, healthy meals. Just because it's healthy for you, doesn't mean it has to be bland!!

I made this at the last minute for a brunch and really liked it. I used less eggs than the recipe calls for and I used uncured bacon instead of canadian. It was so easy to make and really tasty. I can't wait to make it again. The only thing is you have to serve it pretty quickly because it gets cold fast.

I was pleasantly surprised by how good this recipe was! I made it for 2, and the only real change was to add a slice of tomato since I had some on hand that needed to be used up. We had this for dinner tonight instead of breakfast.
