I would add a squeeze of lemon over the zucchini. Otherwise, very good, healthy and filling dinner.

Delicious! I have tried it with and without the fresh mint leaves and prefer it without. Also, I use just one teaspoon of pine nuts per wrap. Thank you for another great recipe Ellie. I love your kitchen, your show, and your cookbooks. I have made so many of your recipes. Please come back with new episodes to Food Network or Cooking Channel. You are a nutritionist, Lisa Lillien--Hungry Girl-- is not. I find too many of her recipes use a lot of processed, prepackaged, fat-free foods. Sacrificing nutrients for fat-free is not healthy at all, no matter how many calories you can save like that. I can not believe they cancelled your show and that Lisa Lillien has a show now.

LOVED THIS WRAP!!!! It seems so simple, but gosh darn it's good! I used Dave Lieberman's hummus recipe instead of using store-bought, which I highly recommend. Since pine nuts were awfully pricey, I used sunflower seeds instead. And I added turkey bacon, a little bit of goat chese, and tomatoes. All of that was great, but what makes this dish is the grilled zucchini. This was one of tne of the best Sunday lunches I've ever had!

This was amazing! Today I launched Day #1 of a healthy lifestyle with these wraps. I found 100 calorie whole-grain tortillas and made this recipe almost exactly as indicated, though I did drop the onions on the pan for a fast grill in the left-over oil from the zucchini, and omitted the pine nuts because I couldn't find any and the mint because I don't like it. The wrap was filling, way more satisfying than fast food, and it was a fast but nutritious meal. Can't really beat that. :

I love wraps so i decided i would make this one. I loved it but i also decided to make a different version. Try this instead of adding the spinach,bell peppers,mint,pine nuts,red onion and hummus. I decided to mix sour cream with feta pieces and some chives to replace the hummus. Instead of red onion i placed more chives in my wrap. Instead of spinach i added romaine lettuce and i also added some sliced tomato and some black pepper turkey meat. It was amazing! of course you could take out the turkey meat and it would be just as great!!

Really yummy wrap. Don't leave out the mint, it's a great added flavor. Will make again.
