    I doubled the recipe as listed but used red and yellow peppper and grilled both plus the onions. The mint was an amazing flavor. The wraps really came out great and my friends, vegan and carnivores alike, loved them!

    This was a wonderful lunch at work! Very filling and tasty! Great blend of textures as well! I used a whole wheat pita instead of the tortilla.

    This recipe was SOOOO good! We made this on a cold, rainy day and everyone was a lot more cheerful. We altered the recipe, by grilling the peppers as well, not using mint and pine nuts, and adding lettuce, tomatoes, and sprouts. We put A TON of hummos on ours, and it didn't get very soggy. Very light, yet very filling. Thanks, Ellie!

    I used raisons instead of pine nuts and this wrap was delicious! I totally underestimated the mint, which I did not skip! I had this for dinner and again the next day for lunch. Very, very good!

    It's true that I left out the onion and pepper, and added some matchstick carrots instead, but everything else I followed exactly as instructed. It was exceptional! I also made my own hummus (dave leiberman's recipe, plus some chili oil, but I can't imagine it not being good with store-bought. Don't leave out the toasted pine nuts, either- they're such an interesting element to the wrap.

    i made this and i absolutely L-O-V-E-D it!!! after grilling the zucchini, i couldn't help myself and grilled the red pepper, and onions too. it was SOO good! i didn't have any mint so i left it out. LOVE IT!!

    This is the best lunch if you want to make the best of your day and feel light and energetic !

    I trick is the grilled zucchini and the crunch of the red pepper, plus the freshness of the mint. Everything just comes together! It's so easy and super good. Will keep as a staple lunch!
