Delicious! Tender and juicy. Note to use low sodium chicken broth, because it was a bit too salty when the sauce was reduced.

This was a tasty recipe, but I had changed it a bit. It seemed like it needed a little bit more, so I sauteed some shallots and some mushrooms in the oil after removing the meat. I then de-glaced w/ the wine, and added the broth and re-added the meat. It turned out great over some cous cous, and was really quick and easy.

I'm not normally a big fan of pork tenderloin, but this is surprisingly good and I will make it again.

I love pork, but my husband is convinced it's either fatty or dry (i.e., the overcooked pork chops of his childhood...This was lean and tender - just be careful not to overcook it! Also, it IS a lot of pepper - cut back if it's not for you - it will still be great!

I've made this along with the suggested sides of Green Bean Salad and Parmesan Mashed Potatoes.....It's GREAT and so easy. I've already made it several times and it's now one of my favorites. Tip: Look for the "extra-lean" cut of tenderloin to limit the fat.

Another one of Ellie's great recipes. Very peppery. If you don't like pepper, don't make it.
